  2. CARROT POTATO SOUP

  5. 1 stick butter 
  6. 1/2 cup onions, chopped 
  7. 3 potatoes, peeled and cubed 
  8. 1 cup carrots, peeled and sliced 
  9. 3 cups water 
  10. Salt and pepper to taste 
  11.  
  12. Melt the butter in a saucepan and saute the onions. Add the vegetables 
  13. and water--the water should just barely cover the veggies. Let simmer 
  14. until the veggies are cooked and then let it cool. Run the mixture 
  15. through a food processor until a smooth consistency is achieved. Heat 
  16. the soup well and serve.
